Finca Las Cruces in Casa de los Planos Cuenca is at an altitude 650-700 metres above sea level. The vineyards were planted in 1994 and were the first of verdejo in the area.
Organic viticulture, working the soil in the traditional way without the intervention of chemical products. The sandy soil allows for minimal intervention. the grapes are hand harvested, delicately pressed, followed by a gentle fermentation to extract the most fruit flavours.
Harvest from the second fortnight in September. Low rainfall and high temperatures during the last ripening phase of the grape, which in contract to forecasts, delayed the start of the harvest thanks to the huge temperature range and led to a slow ripening which resulted in good acidity and fruit
Fermentation controlled at a temperature of 15 degrees, clean musts in stainless steel vats. At every stage of production great care is taken to maintain the freshness and acidity for which the Verdejo is known.
