Tasting Notes: Deep red with purple highlights. The style of Cosme is clearly evident, with a very intense nose of ripe red fruit, liquorice and aniseed. Ageing in new French oak brings touches of spices such as pepper, cinnamon and menthol, making a complex and elegant whole. Ever faithful to its style, it is a powerful, muscular wine, with fine, ripe tannins, sweet flavours on the finish and balanced acidity bringing freshness. The finish is very long, ending on flavours of candied fruit and roasted coffee beans.
Vines of more than 30 years of age, located at an altitude of more than 600m on chalky-clay soils.
Alcoholic fermentation: The grapes are destalked but not crushed, and undergo cold maceration before being fermented in stainless steel tanks with automatic temperature control, pumping-over and micro-oxygenation. The malolactic fermentation takes place in French oak barrels, adding layers of spices and a more complex and elegant character.
