Tasting Notes: Barroco is a bit of an oddity in the Cambis range. This wine, both simple in its blend (100% old Cinsaults) and complex on the palate, can prove deceptive even for the most experienced wine lovers.
In a blind tasting, one might sometimes believe that one is tasting a Pinot de Bourgogne when it is "only" a pure Cinsault produced from their mountain terroir!
While they were initially planning to use the vines of this nearly extinct grape variety to make rosé, Cambis thought, "Why not make a red?!" Barroco is therefore the result of a bold move and a successful experiment. Because yes, making wine is a bit like cooking—you have to try!
Its promising nose gradually reveals floral notes followed by black fruit.
On the palate, a crisp attack will reveal a beautiful complexity with a wide range of aromas between licorice and black fruits.
Food Match : Perfect as an aperitif or with charcuterie, a smoked duck breast salad or even a pissaladière (Pizza Tart with sweet onions, anchovies & olives). .
