Tasting Notes: This lovely Pet Nat named ‘Pinkpoul’ as a play on words with the variety it is made with Piquepoul Noir giving it its lovely bright pink colour. Made by Ancestral method with the wine fermenting in steel and then finishing fermentation in bottle to capture the sparkling. The nose presents a lovely bouquet of yellow peach and floral notes and a hint of red fruits. The palate follows through with lovely fine bubbles, fresh acidity balanced by soft fruits of raspberry and peach and round floral notes.
The story begins in 2015 with François who, after studying enology, was the manager of Domaine Enclos de la Croix, in Lansargues (Hérault, South of France) which he converted to organic vine growing, and focused winemaking on no addition of sulphites. Eventually he decided to work in partnership with Languedoc grape growers to obtain the most beautiful grapes and create a range of organic wines. At the time of the harvest, these grapes are bought and then vinified by François in his cellar in Lansargues. The range of wines are all certified organic and are modernly imagined to enhance an ancestral know-how.
The department of Hérault lies to the northeast of the Aude and west of the Gard, centred on the town of Montpellier. Much of the Coteaux du Languedoc falls within this rugged warm region. The terroir on this south-facing amphitheatre is classically Mediterranean, and the landscape is dominated by garrigue-covered limestone hills and plateaus. During the growing season, the temperatures are moderated by refreshing sea breezes from the Mediterranean that sweep through the vineyards, cooling the grapes and slowing ripening.
Food Match : Lovely as an apertif or with fresh summer salads with peach and burrata.
