Tasting Notes: This wine displays a deep color with garnet reflections. On the nose, aromas of small black fruits and ripe cherry are complemented by spicy and vanilla notes, slightly wooded. On the palate, this wine reveals juicy tannins, followed by a pleasant acidity, contributing to a persistent, harmonious finish.
The grapes are destemmed and crushed, then cold-macerated for five days to extract maximum aromas. Alcoholic and malolactic fermentations are carried out in vats. The duration of vatting at high temperature and final maceration at the hot fermentation lasts between 18 and 30 days, depending on the vat, to achieve concentration and balance. The wine is aged in oak barrels then bottled on the estate.
The soil is composed of dry gravel and the subsoil is clayey-silty-gravelly with traces of iron oxide known as “iron dross”.
The vineyard is cultivated in the traditional way with plot management: ploughing the soil,
grassing, mixed use…Leaf thinning and green harvesting.
Food Match : It will can pair perfectly with a grilled prime rib or a stuffed guinea fowl. Good ageing potential of 10 years.
