Tasting Notes: Pale straw in appearance, with lively aromas of peach and nectarine with a touch of buttery oak. Followed by a bright palate of stone fruit, citrus and lightly toasted oak, balanced with a crisp acidity on the finish. 

For the Drover's Hut Chardonnay they select only the finest grapes. They pick the fruit in the cool of the night to preserve the crisp and bright aromatics and flavours. These characters are present when the fruit is cooler. Once the selection is made, the grapes are crushed, destemed, then the fruit is bag pressed. It will then go through slow, cool fermentation. The fermentation process takes place in stainless steel tanks. After fermentation, the wine is left to mature in French oak barrels for a further 12 months. They leave the yeast in contact with the juice for 6-8 weeks, stirring the tanks everyday to build the middle palate texture of the wine. The winemaking team do this to add complexity and enhance the fruit and oak integration, prior to final blending and bottling.

This wine is named after the hut which is on the edge of the Chardonnay vineyard. This hut sits on the banks of the Murrumbidgee River in Griffith, rural New South Wales. the vineyard keep fishing tackle and a pile of good booze out there, for the staff who want to fish from the river.

Food Match : Good with fish, seafood, white meats, charcuterie. Pan fried scallops are our favourites.
