Tasting Notes: Rich, golden colour. Aromas of ripe pears and white peach. The wine is still youthful, bringing a freshness and lighter touch, as the wine matures the flavours will deepen to become richer and more complex.
Domaine Chante-Cigale is owned by the Favier-Sabon family - it's been in their hands for generations and is one of the oldest in the region - and occupies some 40 hectares comprised of different parcels of land around the village of Châteauneuf-du-Pape, located between Orange and Avignon. A large part of the vineyard is located on the famous plateau de Cabrieres, close to Chateau Montredon.
The grapes are harvested manually with selective sorting. Fermentation at low temprature (66°F) for 21 days in stainless-steel vats. Lees aging for up to 6 months. No malolactic fermentation in order to maintain good acidity.
Recently Christian Favier the father released the reins to his son, Alexandre, who is fast becoming new rising star of Châteauneuf-du-Pape.
Food Match : Excellent on it's own, with Roast Chicken, Pork chops, white meats with sauces, richer seafood dishes.
