Tasting Notes: A fresh white wine with notes of spring character, citrus, grapefruit, hawthorn and pineapple. On the palate flavours of flower and exotic fruits, revealing a wine which is both floral and mineral. The vintage was near perfect - grapes were healthy and showed good concentration and balance.
Harvest is carried out by machine at night to preserve freshness and aromas. This white wine is the result of an eight-hour maceration period and pressing. Fermentation is temperature-controlled. Alcoholic fermentation is carried out at low temperature. The wine is aged in stainless steel vats
The vineyards are on clay-limestone soils with varying amounts of sand. Shallow, well-draining soil. Parcels located in the villages of Pourcieux and Pourrières at the feet of Mount Aurélien and Mount Sainte-Victoire. Mediterranean climate. Château des Ferrages is located in Pourcieux, halfway between Aix-en-Provence and Saint-Maximin, in the prime plots of the Sainte-Victoire appellation. The coolness of the weather is one of its blessings. Whilst rosé wine was already being made at this 8ha Domaine, hillside plots were quickly identified to produce red wine, and others for white.
Food Match : Perfect with salads and fish - especially sea bream and sea bass. But versatile enough to go with pizza, grilled or BBQ'd white meats, seafood, mild creamy cheeses.
