The palate is very nice, fresh, tasty, with a good carbonic sensation and good persistence, giving a very long finish.\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe vineyards are located in the DO Cava region, specifically in the Penedès, where the soil is calcareous clay. The vineyards have trays that are harvested with a machine, and there are grapes that are harvested manually. Wine-growing practices are all respectful of the vineyard and the environment, and they follow a careful plan of ploughing, ensiling, softening, pruning, pruning in green, etc.\u003c\/span\u003e\u003c\/p\u003e\n\u003csection class=\"my-1gkidb0\"\u003e\n\u003cp class=\"bb-text my-16iccbt\"\u003eXavi Pons - winemaker :  The winemaking process consists of a soft press (bladder press), to extract the must. Then it is continuously stirred for 24 hours or longer, and fermentation by grape varieties is carried out. Once fermented, the blend is made. The wine is pressed, clarified and refrigerated, and the second fermentation in the bottle is carried out for about 12 months.
