This Pedro Ximenez is fortified and then aged in a Solera System. The wines have an average age of 7 years.  The result is a sticky, sweet dessert wine that is lighter in style to PX Sherry - a lovely nutty character that has a light freshness. \u003cspan data-mce-fragment=\"1\"\u003eThe nose has aromas of orange \/ citrus, marmalade, dried fruit, coffee, figs, raisins and and spices. The palate has flavours of marmalade, apricot, figgy, confit fruits and spicy \/ oaky orangcio notes. it is full, luscious and intense, sweet yet clean, fresh and not cloying with a good lingering finish.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eTurkey Flat Vineyards are located at Tanunda Creek in the heart of the Barossa Valley and are named after the flocks of wild bush turkeys that used to roam the area. \u003c\/p\u003e\n\u003cp\u003eThe grapes for the Turkey Flat Pedro Ximenez are grown specifically for Turkey Flat Vineyards by a number of traditional Barossa grape growers. When ready the canes are cut, allowing the grapes to dehydrate and concentrate. The grapes are always left to the last minute for harvest so that they are very ripe and sweet (and potentially raisined, if left long enough). After harvest the grapes are crushed and allowed to macerate for 4 days. The juice is then fortified with grape brandy spirit (a neutral, unaged spirit) and matured in a combination of French oak hogsheads and vats. \u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eFood Match :\u003c\/strong\u003e \u003cstrong\u003e\u003c\/strong\u003eServe with Gorgonzola cheese - most blue cheeses.
