Situated on the slopes of the Peñarrubia mountain, the highest part of Jumilla with poor stony soils noted for its richly flavoured, concentrated Monastrell, the bodega owns over 750 hectares of vineyards (mainly bush vines, unirrigated and of very low yield, of indigenous clones from their own nursery) and has access to further fruit from 30 to 70 year old vines. Bodegas Juan Gil is dedicated to producing powerful yet approachable and modern wines, mainly based on Monastrell, which is grown on 85% of the vineyard - other varieties grown are Cabernet Sauvignon, Syrah, Merlot and Petit Verdot.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eBodegas Juan Gil are committed to respecting the land, and to use energy and natural resources efficiently – with regard to their winery, vineyards and wines they produce. The 140ha estate is located at the foothills of the Alps and in close proximity to Lake Garda, which creates a unique microclimate with great temperature exchange between day and night during the harvest time. The soils and vineyard elevation also play roles in shaping the flavors and aromas of the grapes grown here. The Pinot Grigio grapes are carefully picked by hand in mid-August, when the grapes are very crisp and have the perfect level of acidity. They are destemmed and very gently pressed in a pneumatic press. Prior to fermentation the juice is chilled to allow a natural separation of the sediment. After racking, selected yeasts are added to initiate the alcoholic fermentation.
