The main varieties cultivated here are the indigenous Assyrtiko, Xinomavro, Krasato, Stavroto, and Limniona. The last three varieties are local to Thessaly. By law, Rapsani PDO wines must be a blend of Xinomavro, Krasato and Stavroto.
