Tasting Notes: With a unique pale Golden yellow color, it has sumptuous aromas of honeysuckle and lychees, with a mix of citric notes. It is rich and smooth, showing an impressive balance between its sweetness and crisp acidity, helped by a touch of botrytis.
Grown in the westernmost vineyard of the Casablanca Valley, where mild tempratures and constant morning sea fogs, allow slow ripening and concentration of fruit, necessary for Late Harvest wines.
Whole clusters are pressed gently. The juice is decanted at low temperatures and the clear must is inoculated with selected yeasts. Fermentation takes place for 25 days at low temperatures. When the wine riches 14,5% alcohol, the fermentation is stopped and the wine cold stabilized for few months to ensure its quality
