Followed by destemming and then by low-temperature fermentation to\u003cbr\u003epreserve the freshness and the delicacy of the fruit. Light opulence is achieved by\u003cbr\u003eextracting one part of the juice with aid of an Inertis press. No oak aging is used in\u003cbr\u003eorder to produce a wine of pure fruit.\u003c\/p\u003e\n\u003cp\u003eThe Baldès family enjoys a long history in the Cahors region with the first plots\u003cbr\u003ebeing planted back in 1830 in the Clos Triguedina, having identified the best\u003cbr\u003eterraces of the Lot valley. The current proprietor is Jean-Luc Baldès and who\u003cbr\u003econtinues the family innovations in Cahors production – the family was the first to\u003cbr\u003eintroduce stainless steel vats for vinification and was also the first to produce a\u003cbr\u003eMalbec rosé. He enlarged the surface area of the estate to twice its size and\u003cbr\u003edeveloped the production of fine wines.
