Historically, this is the heartland of viticulture in the country, with vine-growing dating back several centuries. Today the winery practices bio-dynamic farming and natural winemaking techniques under the expert guidance of head winemaker Luka Koscak, who has lived and worked among Croatian wine all his life.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan data-mce-fragment=\"1\"\u003eBolfan's cellar and winery is situated in the middle of their vineyards, ensuring a quick transfer at harvest time between the vineyard and the winery, vital to retaining freshness in the wines.
